What is the Most important Rule to Follow When using Fondant and Why?
Applying either a silicone mat down or vegetable oil on the worksurface before rolling out the fondant. This prevents the fondant sticking to the work surface when it comes time to lift and apply to the cake. When I started using fondant I did use cornflour for dusting but I find that it just makes the fondant dry out quicker which will lead to cracking when applying to the cake.
Why is My Fondant Cracking on My Cake?
Fondant cracks when it has dried out to much before apply to the cake which is why you must move quickly. This can be caused by having the air conditioner or fan on. This is why I apply a small layer of oil spray or vegetable fat to the top surface of the fondant before applying to the cake. I find that it prevents corners cracking and the oil will absorb into the fondant leaving a normal matt finish. Another cause for cracking is rolling the fondant out to thin. You must roll the fondant layer from 0.5cm to 1.2cm thick to give it structure.

Yes buttercream does have a lot more moisture compared to ganache. Fondant applied over a buttercream covered cake will sweat after a few hours. This is because of the temperature change from the fridge and the kitchen. You can pat it with a paper towel. Using a box when placing back into the fridge can help. Adding Tylose powder or CMC to the fondant before applying helps the fondant absorb less moisture from the fridge.
How to Fix Dried Out Fondant?
Just need in some oil such as vegetable or spray canola oil and knead it. If there is cracks on the corners of the cake use oil to rub on them.
Should You Chill the Cake Before Applying Fondant to It?
Yes, applying buttercream to the cake the day before you apply the fondant will allow the buttercream to crust over. Crusting the buttercream will allow it to take on the weight of the fondant.
