Strawberry Milk Korean Café Style
Strawberry milk, nothing is more refreshing on a hot day. My Pinterest board is full of this viral Korean Café drink so I thought I would finally give it try on a hot summer day. If you are not a chunky fruit fan than you can leave out the fresh strawberries, it is more for the aesthetic for pictures but does add freshness to the milk drink. This was a really quick recipe to make under 10 minutes and it can keep for 2 weeks in the fridge in a glass jar.
Step 1
Wash strawberries. Then chop strawberries. Set aside some chopped strawberries with 1tbsp sugar. This will add to the strawberry layers later.
Step 2
Place in a saucepan on medium-low heat. Pour in caster sugar allow the juices to release.
Step 3
Add a small amount of water to the corn-starch to make a slurry. Once the juices have released add the corn-starch slurry. Add allow it to boil until thicken.
Step 4
You place the syrup straight into a jar, or you can sieve the strawberry syrup to get a smooth syrup.
Step 5
To assemble your strawberry milk drink. Place ice cubes in the bottom of the glass followed by the chopped strawberries we put aside earlier. Then pour syrup and milk into glass. Re-peat for more layers.

Can you make this with other fruit?
Yes I have made raspberry syrup and cherry syrup. Use the same quantity of fruit but sugar quantity may very depending on how tart the fruit is. I would just start with 5 tbsp sugar and then add to taste.
What else can you use the strawberry syrup for?
This syrup can be used for pancakes, ice-cream and Japanese style French toast. Christie at Home has a great recipe that is thick and custardy.
