Preheat oven to 180℃. Line a tray with baking paper.
In a medium mixing bowl add oats, cinnamon, nuts, dried fruit and carob powder and mix.
Add two egg whites and mix until well coated with egg white.
Lay the mixture flat on the tray. Place in the oven for 20 minutes moving the mixture around every 5 minutes. This allows the heat to distribute evenly.
